Mixed lettuce and red cabbage with rice noodles, cucumbers, red onion, rice noodles and poached shrimp topped with crushed smoked almonds and toasted sesame, ginger and miso dressing

Asian shrimp rice noodle salad

Ingredients

  • Shrimp
  • Rice noodles
  • Mixed salads veggies (lettuces, cucumber, etc.)
  • Sesame oil and sesame seeds
  • Miso
  • Ginger

Preparation

  1. Poach shrimp in salted water also rice noodles. Can use same water. Prep veggies. Add lettuce to bowl and top with rice noodle. Top noodles with chopped veggies of your choice(cucumber, carrot, red onion), top with dressing and smoked almonds or any crushed nut of your choice
