This delicious jam is so good you'll want it in your fridge every day. Add a burst of bacon flavor to eggs or toast. Great for topping a burger too.
Bacon Jam
Prep Time: 10 min Cooking Time: 1 hrIngredients
- 1 lb smoked bacon cut into 1" pieces
- 1 medium yellow onion diced
- 1 shallot diced
- 3 tablespoons brown sugar
- 1 tablespoon butter
- ¼ cup balsamic vinegar
- 1 cup chicken stock
- 2 teaspoon worcestershire sauce
- salt & pepper to taste
- ¼ Water
Preparation
- Cook bacon in a heavy bottom pan or Dutch oven until crispy, about 15 minutes, stirring occasionally
- Add the butter, onions and shallots to the pan
- Season with salt and pepper
- Continue cooking until onions begin to caramelize, about 10 minutes
- Add brown sugar, stir and continue cooking 5 minutes
- Add stock, deglaze pan
- Add balsamic vinegar and worcestershire sauce
- Simmer uncovered, stirring occasionally, until liquids reduce by half, about 20 minutes
- Remove from heat, place mixture in a blender
- Add water and pulse in blender to desired consistency
- Refrigerate in an air tight container for up to a month
