Dining out on Valentine's Day can be an expensive proposition for parents. When you consider the restaurant tab in addition to the cost of a babysitter, the bill can top well over $100. Instead, my hubby and I opt for a quiet night at home with an extra special dish. This year, we're celebrating the 14th anniversary of our first date and I plan to make his favorite, Beef Wellington. It sounds intimidating, but with a few helpful tricks in my recipe, it all comes together in less than an hour. You can turn two cuts of filet mignon ($12), frozen puff pastry ($3), mushrooms ($1) and a few kitchen staples into a romantic meal for two in less than an hour. Add a nice bottle of bubbly to the equation and you've got a memorable Valentine's dinner at fraction of the restaurant price tag.
