This salad is so versatile! It's perfect for cookouts, picnics or neighborhood get-togethers. You can take out the turkey bacon, if you prefer, and add in avocado or goat cheese. Orange peppers are good in it too!
Broccoli Boost Salad
- Yield: 4-6 Servings
Ingredients
- 5 cups(about 1 head) raw broccoli florets, chopped
- ½ red onion
- 4 slices nitrate-free turkey bacon, cooked and crumbled
- 1 cup raw sunflower seeds
- 1 cup dried cranberries
- ¾ cup organic mayo or Veganaise
- 2 tbsp. red wine vinegar
- honey or coconut palm sugar to taste
- ¼ tsp. pepper
Preparation
- In a large mixing bowl, combine broccoli, onion, bacon, sunflower seeds, cranberries and mix well.
- In a separate small bowl, combine the rest of the ingredients and whisk
- Add the dressing to the salad and toss well
- Cover and refrigerate for 1 hour
