Broccoli Boost Salad

This salad is so versatile! It's perfect for cookouts, picnics or neighborhood get-togethers. You can take out the turkey bacon, if you prefer, and add in avocado or goat cheese. Orange peppers are good in it too!

Broccoli Boost Salad

  • Yield: 4-6 Servings

Ingredients

  • 5 cups(about 1 head) raw broccoli florets, chopped
  • ½ red onion
  • 4 slices nitrate-free turkey bacon, cooked and crumbled
  • 1 cup raw sunflower seeds
  • 1 cup dried cranberries
  • ¾ cup organic mayo or Veganaise
  • 2 tbsp. red wine vinegar
  • honey or coconut palm sugar to taste
  • ¼ tsp. pepper

Preparation

  1. In a large mixing bowl, combine broccoli, onion, bacon, sunflower seeds, cranberries and mix well.
  2. In a separate small bowl, combine the rest of the ingredients and whisk
  3. Add the dressing to the salad and toss well
  4. Cover and refrigerate for 1 hour
