Cast-Iron Breakfast Potatoes
Prep Time: 10 min Cooking Time: 1 hrIngredients
- 1 Large cast-iron pan
- 8 Russet potatoes
- 4 Tablespoons Olive oil. More as needed for potatoes
- Kosher salt as desired
- Fresh ground pepper as desired
- 1 bunch of chives
- Sour cream as desired
Preparation
- Preheat oven to 500 degrees.
- 1 Large cast-iron pan
- Wash and dry 8 Russet potatoes
- Coat potatoes in olive oil and kosher salt.
- Put potatoes into cast-iron pan.
- Put pan into oven on middle rack. No lid.
- Cook for 1 hour.
- Use a long thin knife to check the corner of 1 potato to make sure potato is done.
- Serve immediately with sour cream and chives. Dust with more salt & pepper.
- Serve with Mama G's cast-iron scrambled eggs. See my posts for recipe.
- Tip: Coat only the potatoes with the olive oil. You don't want oil to "pool" into the pan.
