Figs are a great meat tenderizer

Add 2-3 fresh figs to stew. It tenderizes the protein.

The fig flavor won't transfer to the stew. Figs have a chemical called Ficin. This breaks down proteins and makes it tender.

Figs will be in season in June, 2017 and run all the way through September. The brown and the white are delicious. The brown tend to be a little sweeter.
