Finnish Blueberry Pie

This traditional blueberry pie, or "Mustikkapiirakka," is a classic Finnish favorite. The base of the pie has a rich, cake like consistency with a fresh blueberry filling and a creamy, custard topping. From the first bite you will be transported to the Land of the Midnight Sun! The recipe comes from my family's dairy farm back in Western Finland. We have been making this dessert for generations and it would be an honor to share this family favorite with the TODAY audience! Finnish Blueberry Pie

  • Yield: Serves 8
  • Prep Time: 15 min
  • Cooking Time: 30 min

Ingredients

  • ½ cup butter
  • ⅔ cup sugar
  • 1 egg
  • 1 cup flour
  • 1 teaspoon baking powder
  • ½ teaspoon vanilla extract*
  • 1 cup wild blueberries
  • 1 cup sour cream
  • ¼ cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract*

Preparation

  1. Preheat oven to 375 degrees F. Spray a 9-inch pie pan with non-stick cooking spray and set aside.
  2. In a large bowl, cream together butter and sugar. Add egg and mix well. Add flour, baking powder and vanilla. Mix to combine.
  3. Pour batter into the prepared pie pan and spread to the edges. Sprinkle blueberries over the batter, all the way to the edges.
  4. In a large bowl, combine sour cream, sugar, egg and vanilla. Pour over blueberries.
  5. Bake for 27-32 minutes or until the edges are browned and the middle is set.

*Note: Scandinavians love baking with vanilla sugar. If you prefer, this recipe can be prepared with 1 teaspoon vanilla sugar in the batter and 2 teaspoons vanilla sugar in the sour cream mixture.
