My youngest daughter has had GI issues all her life. She was diagnosed as Lactose Intolerant at the age of 8. Why she was not tested for Celiac at that time I will never know. She was FINALLY diagnosed at the ripe old age of 24 and since we live together, I changed how I cook. I started a blog and began converting family favorite recipes and posting them on The Kids are Grown, Now What? hoping that there were other families going through the same thing.

Eating naturally gluten free foods is not as difficult as we first anticipated, but there were so many recipes that had become tradition. There was a lot of trial and error in converting those recipes. Gluten Free Green Bean Casserole for Thanksgiving, check! Beer Battered Cod, check! My mother's recipe for stuffing, changed yes, but better!

When my son comes over for dinner he SAYS that he can tell it's gluten free, but says the food is good anyway. I think that's a huge win!
