Ham and Asparagus Spaghetti

This Ham and Asparagus Spaghetti recipe is one of my go to meals when we have leftover ham, especially after a holiday. Made with tender chunks of ham, spaghetti noodles, asparagus and Parmesan cheese, this tasty dinner recipe comes together in a snap.

Ham and Asparagus Spaghetti

Prep Time: 10 min Cooking Time: 15 min

Ingredients

  • 2 tablespoons cooking oil
  • ¾ cup cooked ham, cubed
  • 12 stalks asparagus
  • 3 cups cooked spaghetti or linguini
  • 1 tablespoon butter
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon fresh parsley
  • ½ cup parmesan cheese, shredded

Preparation

  1. Cook spaghetti to package directions
  2. Wash and trim ends of asparagus, and cut into thirds lengthwise
  3. Heat oil in a frying pan over medium heat
  4. Sauté asparagus 3-4 minutes until tender-crisp
  5. Add butter, cooked ham, spaghetti, salt, pepper and parsley until heated through
  6. Add parmesan cheese and mix together
