Home made Caramel Corn

Once you have had home-made caramel corn- you will never eat the "other stuff" again - unless you really miss that silly surprise inside. This is light, crunchy and addicting. You have been warned. This is gluten free and can be made weeks in advance - but it won't last that long!

Home made Caramel Corn

  • Servings: handfulls at a time
  • Yield: About 8-9 cups
  • Prep Time: 20 min
  • Cooking Time: 1 hr

Ingredients

  • 2 sticks of butter
  • 2 cups firmly packed light brown sugar
  • ½ cup light corn syrup
  • pinch of salt
  • 1 teaspoon baking soda
  • 1-2 teaspoons of flavor - I use vanilla butternut. You can use plain vanilla, coffee, caramel, butterscotch - be creative.
  • 3 bags of regular size popped microwave popcorn

Preparation

  1. Pop the 3 bags of popcorn and place in a large bowl
  2. In saucepan, on medium heat, melt and mix butter, brown sugar, corn syrup and salt
  3. When it begins to boil, leave it alone for 5 minutes
  4. Remove from heat and add baking soda and flavor and mix well. It will become foamy and light (the kids love this part!))
  5. Carefully pour over popcorn - it is hot! Take the time to mix well, coating the popcorn with the caramel. I use two large serving forks.
  6. Put all popcorn in a large baking sheet and bake at 225 degrees for 1 hour, tossing and mixing every 15 minutes.
  7. When done, spread out on counter and let cool. Try a piece. Yep. Have another. It's that good.
  8. Place in ziplock bags or package in airtight bags/containers for gifts.
  9. It is delicious alone, but you can add nuts, dried fruit, hard candies, M &Ms etc for gift giving.
