My kids wouldn't eat cereal instead of buying waffles and pancakes I came up with my own batter that I just have to add eggs and milk to (or in a pinch water will do fine). Also, I make them into mini muffins to put in the lunch box.
Homemade Pancake Mix
Ingredients
- 4 cups all purpose flour
- 2 cups cake flour
- 1 tablespoon baking powder
- 2 tsp. baking soda
- 2 ½ tablespoons sugar
- 1 ½ teaspoons salt
Preparation
- Sift all the ingredients together and store in an air tight container
- When ready to make the pancakes add two eggs, 1 tablespoon vanilla, and 1 cup milk
- Cook on a hot griddle. Flip once after bubbles form
- Stir in your favorite ingredients to add variety, i.e. chocolate chips, cinnamon, sprinkles
- If I have some leftover I will fill a mini muffin tin ½ full with the batter and bake at 350 degrees F
- If you make muffins you will want to definitely add some sugar, brown sugar, and/or maple syrup
- I often was out milk and eggs so I know that this recipe works by substituting water ;)
