This is a different twist on a casserole that has been a huge hit with everyone I make it for! I am a dairy farmer so of course it includes cheese and milk. It is unique and delicious for brunch or supper time!

Ingredients

  • 2 cans of hominy drained
  • 8 ounces of sharp cheddar shredded
  • ½ stick of butter
  • 2 tbs of flour
  • milk to create a rue, about two cups
  • ¼ cup each of onion and bell/jalapeno pepper,
  • 1 cup of cooked chorizo or chopped ham (optional)
  • chopped green onion for garmish

Preparation

  1. melt butter in a pan
  2. stir in flour til bubbly
  3. add milk to create a creamy rue, keep stirring
  4. slowly add in cheese to create a cheese sauce
  5. remove from heat
  6. saute quickly onion, bell pepper, jalapeno in pan for 1-2 min
  7. add onion mixture in with cheese sauce and stir
  8. break up drained hominy and add into cheese mixture/onion mixture too
  9. put in casserole dish and bake 30 minutes at 350 til bubbly, remove form heat
  10. top with chopped green onion

This is a unique and fun twist on mac and cheese. i added some heat with the peppers and onions. Then i made it a one main dish by adding either leftover chopped ham or chorizo. We love this at brunch time or for potluck dinners! Everyone loves it!
