I don’t know what it is, but I can never have too many jalapenos. I know I have confessed my love for them before, but I absolutely can’t live without them. Many of you might think jalapenos in my granola?…gross! Granola is made for nuts, oats, fruit, and occasionally chocolate chips. But, jalapenos? Trust me on this one! My Jalapeno Granola will surprise you.

Granola is one of the easiest things to make at home. There are so many variations you can create by mixing and matching new, crazy ingredients. Plus, if you or a family member can’t consume a certain ingredient, granola is one food that you can easily adapt each batch to meet dietary needs. Just throw together what you love and bake!

For this recipe I only use fresh jalapenos (not the pickled ones) because they cook down perfectly in the oven. They are slightly spicy and give the granola just enough heat to keep you coming back for more. It is not an overwhelming, can’t stand it, type of spicy. It’s an enjoyable, sweet & spicy combination. Your friends and family won’t know what hit them.

Preheat your oven to 300 degrees. In a large bowl combine the following ingredients and stir well:

  • 3 cups oats
  • 1/4 cup flax seeds
  • 1/4 cup hemp seeds
  • 1 cup mixed nuts- roughly chopped
  • 2 fresh jalapenos- seeded and chopped
  • 1/4 cup maple syrup
  • 1 Tbsp honey
  • 1/4 cup olive oil
  • 1/2 tsp salt & pepper

Make sure all the dry ingredients are coated with the wet ingredients. Next, pour your granola onto a prepared baking sheet and spread it out evenly. Bake for approximately 30 minutes, stirring often. Remove from the oven and let cool. If the granola does not seem finished, don’t worry, it will become more crunchy as it sits.
