Ingredients
- .5 lb Chuck Steak
- .5 lb Honeycomb Tripe
- ½ C chopped Cilantro
- ¼ C chopped Green Onions
- ½ C Mint Leaves
- Lime Wedge
- ½ stalk Lemongrass
- 2 tsp Fish Sauce
- ¼ tsp MSG
- 1 Tbsp ground toasted rice
- ¼ tsp ground Chili Peppers (optional)
- 1 Thai Chili Pepper (optional)
- Salt
Preparation
- Bring large pot of water to boil
- Season water with Salt and Lemongrass (cut into 2 pieces)
- Boil tripe for about 1 hour or until tender
- Thinly slice Chuck Steak into tiny pieces
- Saute steak in pan until slightly pink and remove from heat
- Transfer meat to mixing bowl and set aside
- Once tripe is tender, remove from water
- Thinly slice tripe into 2 inch strips and add to steak and Mix
- Season with Lime, Toasted Rice, ground chili peppers, MSG, and fish sauce
- Mix well and Taste
- Appeal to your taste buds by adding more lime or fish sauce as needed
- Add Cilantro and Green Onions and mix well
- Plate over bed of lettuce leaves and Top with Mint Leaves
