In my house we eat this as an entree but suppose they would make a good heavy-app as well.
Mini Veggie Pot Pies
- Yield: 8 mini pies
- Prep Time: 10 min
- Cooking Time: 30 min
Ingredients
- 1 Can of butter flavored pre-made biscuits
- 10 ¾ oz cream of potato soup
- ½ cup sweet peas or green beans
- ½ cup corn kernels
- ½ cup diced carrots
- Optional: ½ cheddar cheese, shredded
Preparation
- Press each biscuit into 5" round
- Grease muffin tin and place each into own cup
- Mix soup and veggies together in a separate bowl
- Spoon mix into each cup, shy of top of each rim. Fold dough slightly in around edges.
- Bake 375 for 25 minutes
- Optional: Sprinkle cheese on top and bake 5 more minutes..
- Wait one minute before removing from pan
