Pineapple Carrot Cake
- 1 cup walnuts
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 and 1/2 tsp baking powder
- 1/2 tsp salt
- 1 and 1/2 tsp ground cinnamon
- 3/4 cup granulated sugar
- 3/4 cup light brown sugar
- 1/2 cup oil
- 1/2 cup unsalted butter, melted
- 4 large eggs
- 2 tsp vanilla extract
- 2 and 1/2 cups finely grated raw carrots (about 3/4 pound)
- 1 cup crushed pineapple, drained (from a 20oz can)
Orange Cream Cheese Frosting
- 1/4 cup unsalted butter, softened
- 1 (8oz) package cream cheese, softened
- 2 cups confectioner's sugar
- 1 tsp vanilla extract
- 1 tsp orange zest
