This recipe has been a family favorite dessert through 3 generations. It first came from my two Aunts and has been passed down through the years. I'm not sure where it originated from, but I do know it goes quickly at any holiday get together.

Seven-Up Salad

Ingredients

  • 2 packaged mixed fruit jello
  • 10 oz 7-up or cranberry Sierra Mist
  • 1 can crushed pineapple- drained save juice and set aside
  • 3 medium bananas sliced
  • 2 cups boiling water
  • Topping:
  • Saved pineapple juice
  • 2 tablespoons flour
  • ½ cup sugar
  • 1 cup whipping cream
  • 3 tablespoons butter
  • Garnish
  • Pecans
  • Cherries
  • Flaked Coconut

Preparation

  1. Dissolve jello in boiling water
  2. Add 7-up, bananas and pineapple
  3. Refrigerate till set- usually 2 hours or overnight
  4. Topping:
  5. In medium sauce pan add pineapple juice, flour and sugar
  6. Cook low heat until thickens- stir occasionally
  7. Remove from heat, add butter and cool completely
  8. Once cooled add whipping cream but do not whip
  9. Spread over jello mix
  10. Garnish with coconut, pecans and cherries

7-up salad has been a staple at our table for years. Holiday and any occasion. One thing is always agreed upon- no matter how much is made, there is never enough. Everyone loves it- even the little ones.

A few years ago I substituted cranberry Sierra Mist for the 7-up and it gave it just a little extra kick. No one could tell the difference. They loved it just the same. This was the one thing my mother and my cousin counted on for Christmas and Thanksgiving so they taught me how to make it and now I carry on the tradition ;)
