A delicious fresh springy salad!
Strawberry Balsamic Salad

Ingredients
- 2 teaspoons strawberry perserves
- 1 tablespoon balsamic vinegar
- 3 tablespoons extra-virgin olive oil
- 1 shallot, chopped
- 1 teaspoon of honey
- Salt and pepper, to taste
- 1 pint strawberries, sliced
- ⅓ cup pecans, pine nuts or walnuts (optional)
- ⅓ cup or more of gorgonzola or blue cheese
- 4 to 5 cups chopped spinach or mixed greens
Preparation
- Place perserves, honey and shallot in a medium bowl and whisk in vinegar then extra-virgin olive oil.
- Season the dressing with salt and pepper.
- Add the strawberries and greens to bowl and toss to coat evenly in dressing. Top with gorgonzola and nuts.
