Taco Tuesday- Rice Bowl (Kid approved!)

Do you love Taco Tuesdays as much as we do? We love waking up knowing what is for dinner, and what is easier than tacos??? Well, this taco rice bowl is! The yum of the taco, but in a bowl. Kids still get to experience the fun of adding their toppings, and many kids may prefer the rice over the tortilla. We make this not just on Tuesdays because it is so loved by the families and easy and quick to prepare. We sometimes add a side of refried beans topped with shredded cheese and a dollop of cream cheese. Follow it up with some Dulce de Leche Ice Cream and you have just turned your Taco Tuesday up a notch. We hope you enjoy this dish as much as we do.

Taco Rice Bowl:

-2 cups cooked rice

-1 lb. ground beef or turkey

-4 Tablespoons of Taco Seasoning (we LOVE Penzeys Taco Seasoning; we like to mix 2 TB regular and 2 TB bold). Any taco seasoning will do.

-3/4 cup water

-Toppings of your choice; we love: shredded lettuce, shredded cheese, chopped onion, sliced black olives, avocado, sour cream, salsa (we love a pineapple salsa with this), corn chips.

Heat a large skillet over medium high heat and brown the ground beef or turkey until cooked through. (We drain ours before adding back to the pan.) After draining, return to pan and add the Taco Seasoning, cooking over low heat and stirring about 2 minutes to coat meat with seasoning. Add the water and stir to combine. Lower heat and simmer 8-10 minutes or until most of the water has been absorbed.

Divide rice into serving bowls, top with taco meat and toppings and enjoy
