Baked Mexican-Avocado with Egg

Ingredients
- 1avocado, sliced in half
- 2 eggs
- 1 tablespoon low sodium black beans
- 1tablespoon shredded cheese
- 1tablespoon chopped tomatoes
- Salsa ( optional)
- Salt and pepper to taste
Preparation
- Slice avocado, remove pit and scoop out a bit to make room for filling
- Fill with beans, cheese
- Carefully break egg into avocado
- Top with a little more cheese and chopped tomatoes
- Bake at 400 for 20 ( or to your desired egg doneness
- Serve with salsa
- Optional: enjoy with some multigrain toast
