Cast-Iron Breakfast Potatoes

Prep Time: 10 min Cooking Time: 1 hr

Ingredients

  • 1 Large cast-iron pan
  • 8 Russet potatoes
  • 4 Tablespoons Olive oil. More as needed for potatoes
  • Kosher salt as desired
  • Fresh ground pepper as desired
  • 1 bunch of chives
  • Sour cream as desired

Preparation

  1. Preheat oven to 500 degrees.
  2. 1 Large cast-iron pan
  3. Wash and dry 8 Russet potatoes
  4. Coat potatoes in olive oil and kosher salt.
  5. Put potatoes into cast-iron pan.
  6. Put pan into oven on middle rack. No lid.
  7. Cook for 1 hour.
  8. Use a long thin knife to check the corner of 1 potato to make sure potato is done.
  9. Serve immediately with sour cream and chives. Dust with more salt & pepper.
  10. Serve with Mama G's cast-iron scrambled eggs. See my posts for recipe.
  11. Tip: Coat only the potatoes with the olive oil. You don't want oil to "pool" into the pan.
