This recipe for herb roasted nuts has only 5 ingredients and only takes 15 minutes from start to finish. It is the perfect snack to take to work, pack in your kids lunch, or to share at a party. It has amazing flavor and is such an easy and healthy snack to start your new year off. It is also great for upcoming Super Bowl parties, as well as Award Show viewing parties.
Healthy Snack: Herb Roasted Nuts
- Yield: 5 Cups
- Prep Time: 5 min
- Cooking Time: 10 hr
Ingredients
- 5 cups of nuts (I used cashews)
- ¼ cup olive oil
- 1 Tbs. fresh rosemary, finely chopped
- 1 tsp. fresh thyme, finely chopped
- 1 Tbs. Maldon or sea salt
- Fresh cracked pepper
Preparation
- Preheat oven to 375. Line a rimmed baking sheet with parchment paper and set aside.
- In a bowl, mix the olive oil, chopped herbs, salt and pepper until combined. With the nuts in a single layer on the prepared baking sheet, pour the dressing on top and coat the nuts until evenly coated. You could also do this step in a bowl and pour the combined mixture on the prepared baking sheet.
- Bake the nuts for 5-10 minutes, checking regularly so they do not burn. Once roasted to a golden brown color, remove them from the oven and sprinkle with Maldon salt. Serve warm or once they have cooler. Enjoy!
