Light, fluffy pancakes zipped up with lemon zest and fresh lemon juice, served with a sweet-tart lemon creme.
Lemon Creme Pancakes

Ingredients
- 1 cup flour
- 3 tsp baking powder
- 1 tsp sugar
- zest of 1 lemon
- 1 egg
- 1 cup milk
- ¼ cup lemon juice
- 1 cup heavy whipping cream
- zest of 1 lemon
- 2 Tbs sugar
- 2 Tbs lemon juice
Preparation
- Combine the flour, baking powder, sugar, zest, egg and milk into a mixing bowl and start to mix vigorously with a whisk, adding in the lemon juice gradually.
- Pour batter onto a griddle heated over medium-high heat and wait until large bubbles form.
- Once the large bubbles form, flip over the pancakes to complete cooking, until steam rises up off the pancake.
- Serve with lemon creme and garnished with additional zested lemon rind and lemon slices.
- Creme: Combine the whipping cream, sugar and zest in a metallic bowl and whisk until soft peaks form, then add in the lemon juice and continue whisking until stiff peaks form.

I have a giant lemon tree in my backyard and every year in January, it showers me with thousands of lemons. I'm always looking for fun ways to use lemons and this year, I threw them into my favorite basic pancake recipe. I added some light and zippy lemon creme on the side to make these pancakes like a taste of heaven.
