A light and fruity paleo treat made with fresh strawberries and coconut flour. And in less than 5 minutes, you can devour this individually portioned mug cake!

Paleo Strawberry Mug Cake

Ingredients

  • 6 large strawberries
  • 1 teaspoon raw honey (or more if you want more sweetness)
  • 1½ teaspoon coconut oil
  • 1 large egg
  • 2 tablespoons + 1½ teaspoons coconut flour
  • ¼ teaspoon baking powder

Preparation

  1. Cut the green tops off 6 strawberries and place in to a small food processor or blender.
  2. Combine the raw honey and coconut oil in a small, microwavable bowl. Microwave 5-10 seconds, until the oil and honey is slightly melted, then add to the food processor.
  3. Pulse or blend until well combined.
  4. Pour the mixture into a large mug and add the large egg. Mix well.
  5. Add the coconut flour and baking powder to the mug. Mix until everything is well combined.
  6. Microwave for 3 minutes.
  7. Cake will be VERY hot so let cool before consuming. Top with more fresh strawberries if desired.
