Roasted Red Pepper Tomato Bisque Soup

This soup is creamy and packed with lots of flavor. Very easy to make and can be enjoyed any time of the year! Best with a savory grilled chicken sandwich!

Roasted Red Pepper Tomato Bisque Soup

Prep Time: 10 min Cooking Time: 45 min

Ingredients

  • 2 Red peppers
  • 4 cans of diced tomatos
  • Chicken broth
  • Minced garlic
  • Fresh basil
  • Heavy cream

Preparation

  1. Add all cans of tomatoes to pot
  2. Add about 1-1.5 cups of chicken broth to pot
  3. Add one tablespoon of garlic
  4. Add a couple basil leaves to the pot
  5. Bring to a boil and then let simmer
  6. Coat red peppers in olive oil
  7. Roast peppers in oven on 400 degrees for about 30 min or until blackened on outside
  8. Remove skin from pepper
  9. Add the peppers to the soup and let it cook for another 15 minutes
  10. Pour soup into a blender in small batches to blend smooth
  11. Add heavy cream to taste
