Slow Cooker Chicken Quinoa Soup
Prep Time: 20 min Cooking Time: 4 hrIngredients
- 2 chicken breasts
- 2 tbsp olive oil
- 2 cups quinoa
- 3 full size carrots, chopped
- 2 celery stalks, chopped
- 1 yellow onion, diced
- 2 tbsp fresh parsley
- 64 oz. chicken broth
- Pinch of dried thyme
- Salt and pepper to taste
- Additional parsley for garnish
Preparation
- Chop carrots, celery and onion and set aside.
- Heat slow cooker on high and place chicken on bottom, drizzling olive oil overtop.
- Throw carrots, celery and onions overtop, followed by quinoa, salt and pepper.
- Pour chicken broth overtop of everything.
- Cook on high for approximately 3.5 hours; remove chicken and shred into smaller, bite-size pieces and then return to slow cooker and add fresh parsley.
- Cook for an additional 30 minutes.
- Garnish with fresh parsley and enjoy!
