Fresh Alaskan Salmon is one of my family's favorite choices for dinnertime. This healthy and flavorful recipe was inspired by a recent vacation in Florida where coconut was as abundant as the selection of fresh fish. It's full of flavor and a great choice for a healthy lifestyle; my five year old son loves it!
Sweet Ginger Sesame Salmon
1.5 lbs. fresh wild salmon, cut into four portions
2 T sesame seeds
1 T paprika
2 T coconut flakes, minced
1 inch piece of fresh ginger, minced
1 T sugar
2 T soy sauce
Rinse salmon and pat dry, set aside on a sheet pan, skin side down. Combine remaining ingredients in a small bowl until mixed evenly. Spread mixture over the top of the salmon flesh, leaving the skin side plain. You can let the fish marinate for up to 30 min. On a hot grill or in a pan over medium-high heat coated with oil, place the salmon flesh side down for 2-3 min. Flip over and cook another 3 min or until desired doneness is achieved (I like mine medium rare with a translucent orange center). Transfer to a serving dish and serve with crunchy green beans tossed with sesame seeds or other fresh vegetable.
