The combination of mint, lemon, and vanilla make the natural sweetness in these favorite springtime berries pop! This is the perfect dish to bring to picnics and barbecues or even as a snack or dessert anytime of the day. The longer it sits in the fridge the more the flavors intensify so make a big bowl on a Sunday and enjoy throughout the whole week.

Vanilla Mint Berry Fruit Salad

  • Servings: 1 cup
  • Yield: 4 servings
  • Prep Time: 5 min

Ingredients

  • 2 cups fresh strawberries, diced
  • 1 cup fresh blueberries
  • 1 medium apple, diced with skin on
  • 1 tbsp fresh mint, chopped
  • juice and zest of ½ lemon
  • 1 tsp pure vanilla extract

Preparation

  1. Toss diced apples with lemon juice in a large bowl.
  2. Add strawberries, blueberries, mint, and vanilla and toss until combined.
  3. Top with lemon zest. Serve chilled.
