Mom (Myrna Weisberg) passed away in her sleep in 2004 from an undetected brain aneurysm. I hate to cook and I don't cook often. I especially don't cook dishes with 3or more ingredients. The one recipe I do cook for every family gathering is my mother's casserole. I remember it at every holiday as a child, it was the one recipe my mom enjoyed cooking also!
Everyone loved it and everyone still loves it! WE THINK OF MOM WITH EVERY BITE!
Mom's Broccoli Cheese Casserole
Ingredients
- 5 packages of cooked drained chopped frozen broccoli
- 1 medium velveeta stick
- 1 stick butter
- 1 box of ritz crackers
Preparation
- Cook broccoli and drain
- Mix in ½ butter and velveeta in a casserole dish
- When ready to heat pour over top 2-3 packages of ritz crackers; crumbled
- Pour ½ melted butter over top for slight browning
- Cook at 350 degrees approximately 20 minutes or to taste
- Eat and enjoy!!!

All of my family and now my husband's family know that Mom's Broccoli Cheese Casserole comes to every holiday as a side dish. Mom's legacy is always with us! She got the recipe from her mother who is also in the photo attached. My children in this photo are now 19 and 17. Marci will be home for the holidays from College and my son, Zach will be leaving for College next year. They both know that I just hate to cook! This however, they both love and they both know I actually enjoy making. Or, at least they act like they love it? Everyone knows how important and special it is for all of us to have our Broccoli Cheese Ritz Cracker Casserole at our our holiday gatherings.
I am even more excited to now be one step ahead in my cooking for Thanksgiving!
