Swimsuit season is almost here and if you are up for a challenge, then you should check out Dr. Oz's 28-Day Shrink Your Stomach Challenge. I decided to partake in this challenge and started it a few days ago. Being a TODAY Food Contributor, I was watching the TODAY show last week and saw Dr. Oz talking about this challenge. And as a food blogger, I am always developing new recipes and that means a few extra pounds have been creeping up on me and I thought this challenge was a perfect way to jumpstart some healthier eating just in time for summer. And who doesn't want a flatter stomach and trimmer waistline? I know I do!
For those of you that follow me because I'm a burger blogger and this is also the beginning of grilling and burger season, don't worry. I promise that I am still developing new burgers for the upcoming season. I have been working on some really decadent and delicious burgers that I will unveil, just in time for Memorial Day Weekend. I am still the burger girl, but for the next few weeks I will be posting some healthier recipes.

Here's a few of my recipes that I have created and they can be easily adapted for this challenge:
Remember my Healthy Buffalo Quinoa Bites? These can easily be adapted by removing the apricot preserves and using fresh fruit and using plain hot sauce instead of the buttery buffalo sauce. And just omit the cheese. These are delicious!
Also try my Teriyaki Pineapple Chicken Bowl. Simply substitute chicken breasts for the chicken thighs and instead of the teriyaki sauce, just use soy sauce or coconut aminos.
One thing that you can make everyday, is the Nutritious Veggie Flush. Check out the recipe on the Dr. Oz site.
I also made a large pot of Veggie Soup that I transferred to a crockpot to eat for the next few days. This soup in the crockpot has been a lifesaver. When I am craving something savory and am in the kitchen, I simply eat a small ramekin of this delicious vegetable soup. I will post my recipe this week for the soup.
