Take your traditional pot roast and throw it out the window. This A1 inspired beef roast is made with all real-food ingredients, for a tender, flavor enhanced roast the family will love. Plus it's easy! Just set and forget in your slow cooker.

A1 Inspired Slow Cooker Beef Roast with Blistered Tomatoes

  • Yield: 4-6 servings
  • Prep Time: 10 min
  • Cooking Time: 4 hr

Ingredients

  • 2 - 3 pound beef chuck roast
  • ¼ cup coconut aminos (or soy sauce)
  • 2 tablespoons red wine vinegar
  • juice of ½ orange
  • 1 tablespoon Dijon mustard
  • 2 tablespoons tomato paste
  • 1 pint grape tomatoes
  • Optional: fresh basil to garnish

Preparation

  1. Place the beef chuck roast in the bottom of a large slow cooker
  2. Combine the liquid ingredients and pour all over the beef chuck roast. Then combine the tomato paste and dijon together and smother it over the top of the roast
  3. Add the tomatoes along the sides of the roast
  4. Cook on low for 4-6 hours
