Our family gatherings have always revolved around food. Everyone loves to cook, but honestly we probably like to eat even more. I have so many memories of my aunts, uncles and cousins in the kitchen, each playing their own part. My Aunt Pam - an especially gifted cook - often made these Chalupas when we were all together and they were always a hit. The recipe has become a go-to when we're craving comfort food... which is right about now, with a fire in the fireplace and football on the TV.
This is a great Mexican party dish, and perfect for a crowd because everyone can build their own concoction. You might have leftovers, but it tastes even better the next day!
Aunt Pam's Chalupas
- Yield: 8 to 10 servings
Ingredients
- 3 lb. pork loin roast
- 1 lb. pinto beans
- 3 cloves garlic
- 2 Tbsp chili powder
- 1 tsp oregano
- 1 can green chilies
- 1 Tbsp ground cumin
- 1 Tbsp salt
- Tortilla chips
- ½ lb. grated cheddar cheese
- ½ lb. grated Monterey Jack cheese
- Salsa
- 1 large tomato, diced
- 1 can black olives, sliced
- Sliced avocado
- 1 bunch fresh cilantro, chopped
- Grated lettuce
- 1 bunch green onions, chopped
- Sour cream
Preparation
- Soak the pinto beans in 4 cups of water in a large pot, overnight.
- Add the pork and bring to a boil, them let simmer for 3 hours, partially covered.
- Remove the pork from the bones and return the meat back to the pot with the beans.
- Add the garlic, chili powder, oregano, green chilies, cumin and salt, and stir to combine.
- Let simmer for another 3 hours.
- Serve over chips with cheese and whatever remaining ingredients you desire.
