Convenient and sinfully delicious with none of the guilt!

Bananas Foster Overnight Oats

  • Yield: 4 servings
  • Prep Time: 5 min
  • Cooking Time: 5 min

Ingredients

  • 1 cup old fashion or steel cut oats (not quick oats)
  • 2 teaspoons ground flaxseed
  • 2 cups milk
  • 1 teaspoon coconut oil
  • 3 very ripe bananas, sliced
  • 2 teaspoons pure vanilla extract
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons maple syrup

Preparation

  1. In each of 4 small glass jars, place ¼ cup of oats, ½ teaspoon of ground flaxseed, and ½ cup of milk. Set aside.
  2. In a small saucepan, heat the coconut oil over medium heat. Add the bananas, vanilla, and cinnamon to the heated oil and sauté until the bananas start to break down and release some juice and natural sugars, 2 to 3 minutes.
  3. Add the maple syrup and stir to mix. Cook for another minute and then remove from the heat.
  4. Divide the cooked bananas evenly among the jars.
  5. Stir gently to mix. Cover and refrigerate overnight
  6. In the morning, enjoy cold right out of the fridge, or warmed in the microwave (for about 30 seconds on high).

Not a morning person? Can’t rouse the kids from bed? Well, here’s my solution … start the day with some breakfast fun—eat dessert first—and no one even has to know it’s healthy! My riff on traditional Bananas Foster (that heavenly flaming New Orleans-born dessert made with bananas, brown sugar, butter, cinnamon, liqueur, and rum served over ice cream!) has all the taste of the original, with none of the guilt. Plus, it’s super easy to make and is deliciously and nutritiously filling to fuel you for all that your morning brings on.

Step away from the high-sugar, fake-flavored instant oatmeal and discover a new real food breakfast staple that is low stress, high flavor, and good for everyone. Smiles guaranteed.

Making this recipe is super easy. Check out how these are done below.
