If you are a fan of BBQ Chicken Pizza, then this is the dip for you. It has the great BBQ chicken flavors, along with some onions, bacon and pineapple. After you add the cream cheese to this combo, it is so yummy! This is perfect for your next tailgate or game day party. It is so simple, just add all the ingredients to a slow cooker and your dip will be the star of the party. The easiest way to make this is to add some rotisserie chicken that you have shredded. But, if you have some chicken breasts or thighs in your refrigerator...simply throw them into your slow cooker with all of the ingredients. Once the chicken is cooked, simply shred the chicken and then add it back into the slow cooker. You're covered no matter what type of chicken that you use.

BBQ Chicken Pizza Dip

Prep Time: 10 min Cooking Time: 4 hours

Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 large onion, diced (red, white or yellow)
  • 8 ounce can crushed pineapple with juice
  • 1 tablespoon dry ranch seasoning (or onion powder and dill weed)
  • 1 garlic clove, minced
  • ½ cup cooked bacon, chopped
  • 2 - 8 ounce packages cream cheese
  • 1 cup bbq sauce
  • 2 cups shredded cheddar cheese (I used colby jack and mozzarella/provolone)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup chicken broth
  • 1/4 cup beer or 2 tablespoons marsala cooking wine
  • Optional - 2 tablespoons fresh chives or cilantro, chopped for garnish

Preparation

  1. Add all ingredients to a slow cooker for 4 hours on high or 8 hours on low.
  2. Stir and serve, garnish with fresh chives.
  3. Serve with pita chips, crackers, tortilla chips or pizza crust bites. (I like to buy refrigerated pizza crust and bake it, then cut into small pieces. It's bite size BBQ Chicken Pizza's.)

Recipe Tags

After the dip is cooked, stir it well and then add additional bbq sauce and/or cheese to your desired thickness.

I like to add some extra bbq sauce on the table along with some freshly chopped vegetables while serving.

With every hot and savory dip, you need a cold and sweet dip. Here is my:

Sweet & Salty Samoa Dip. This rich and decadent chocolate-caramel-coconut dip is divine.

8 ounces cream cheese, softened

1/2 cup hot fudge or chocolate syrup (fudge will make it a little thicker dip)

1/2 cup caramel

2 teaspoons vanilla extract

1/8 teaspoon salt

1 cup sweetened coconut flakes

1 cup finely crushed shortbread cookies

Optional - candy pieces to garnish. I used Almond Joy pieces - Milk Chocolate, Coconut and Almond

In a bowl, add all the ingredients together and thoroughly combine. Add to a serving dish, cover and refrigerate until ready to serve. Garnish with candy pieces, if desired. Serve with shortbread cookies, pretzels and/or chocolate pretzels.
