Colorful Potato Hash + Peach Bellinis

Ingredients
- ½ large onion
- 2 red potatoes
- 1 sweet potato
- ½ purple potato
- 2 garlic cloves
- salt and pepper
- ½ tbsp thyme
- 2 tbsp olive oil
- 6 pieces of bacon
- 2-4 eggs
Preparation
- Preheat the oven to 425 degrees.
- Chop your onion and potatoes into bite-sized pieces. Mince the garlic.
