Prep Time: 20 min Cooking Time: 40 min

Ingredients

  • 1 head caulflower, broken into pieces
  • 1bunch broccoli, broken into pieces
  • 2 carrots, sliced into rings
  • 1 cup mayonaise
  • 1 ½ cups swiss, shredded
  • ½ cup parmesan, plus ¼ cup for topping
  • 2 tablespoons butter, melted
  • ½ cup panco bread crumbs
  • salt, pepper, garlic powder-to taste

Preparation

  1. Prepare vegetables, cut and break up into bite sized pieces, steam until crunchy. Put vegetables into casserole., season with salt, pepper, garlic powder. Put mayo in a lagre bowl, mix in swiss and ½ cup parmesan. Spoon over vegetables. Mix panco and remaining parm, add to melted butter. Sprinkle over casserole. Bake 30 to 40 minutes and ENJOY !
