A mixture of cauliflower, broccoli and carrots, baked with a cheese topping
fall vegetable casserole
Prep Time: 20 min Cooking Time: 40 minIngredients
- 1 head caulflower, broken into pieces
- 1bunch broccoli, broken into pieces
- 2 carrots, sliced into rings
- 1 cup mayonaise
- 1 ½ cups swiss, shredded
- ½ cup parmesan, plus ¼ cup for topping
- 2 tablespoons butter, melted
- ½ cup panco bread crumbs
- salt, pepper, garlic powder-to taste
Preparation
- Prepare vegetables, cut and break up into bite sized pieces, steam until crunchy. Put vegetables into casserole., season with salt, pepper, garlic powder. Put mayo in a lagre bowl, mix in swiss and ½ cup parmesan. Spoon over vegetables. Mix panco and remaining parm, add to melted butter. Sprinkle over casserole. Bake 30 to 40 minutes and ENJOY !
