Wondering what to do with your game day leftovers? Make a Game Day Leftover Egg Bake. We love sports and we love to entertain, but we always have leftovers after a big game. So here's my delicious and easy way to transform game day treats into a hot and cheesy eeeeeats. Mornings after game days will never be the same.
Game Day Leftover Egg Bake
- Servings: 1 slice
- Yield: 12 servings

Ingredients
- First layer - BREAD - any leftover bread items such as buns, croutons, onion rings, jalapeño poppers, tater tots or mozzarella sticks.
- Second layer - MEAT - any leftover meat items such as hamburgers, hot dogs, brats, bacon, chili, pigs in a blanket or sandwich meat.
- Third layer - VEGGIE/DIP - any leftover veggies/dip such as mushrooms, peppers, tomatoes, broccoli, 7 layer dip and any cream cheese based dips.
- Fourth layer - EGG/CHEESE - 8 eggs, ½ cup milk, ½ teaspoon salt, ¼ teaspoon pepper, ½ cup shredded cheese.
- Optional toppings - sour cream, salsa, guacamole, cilantro, tomatoes and black olives.
Preparation
- Preheat oven to 350 degrees.
- Spray a 9x13 casserole dish with non-stick spray.
- Layer the crumbled breads items on the bottom of the casserole dish, just enough to cover the bottom.
- Then add the crumbled or chopped meats followed by some veggies and/or dip.
- In a bowl, whisk together eggs, milk and seasonings. Pour egg mixture into the casserole dish and top with cheese.
- Bake for 40-45 minutes, or until eggs are completely cooked.
Recipe Tags
This casserole can be made the night before, just cover and refrigerate. The next morning, uncover and bake as directed.
When using leftovers, make sure the food hasn't been left out too long. Don't use items that may have spoiled.
Feel free to use ramekins or muffin tins for small portions or to individualize each egg bake. For every 1 egg, I use approximately 1 tbsp milk and 1 tbsp shredded cheese.

First layer - croutons from my chili bar
Second layer - beef chili
Third layer - hormel cream cheese dip along with tomatoes, red onions, scallions, black olives and shredded cheese leftover from the chili bar toppings
Fourth layer - eggs/milk/cheese
I layered it all in a casserole dish last night and baked it off this morning at 350 for 45 minutes. I topped it with sour cream, guacamole, tomatoes, scallions, cilantro then drizzled it with some enchilada sauce. I call it my Enchilada Chili Breakfast Bake.
