A simple way to prepare artichokes on the grill with a two-ingredient dipping sauce.
Grilled Artichokes
Ingredients
- 1 medium to large artichoke per two people
- 2 lemons
- 1 cup water
- 1 Tbs salt
- 1 Tbs olive oil
- 1 cup sour cream
- 3 Tbs dijon mustard
Preparation
- start by trimming off the tips of the leaves
- cut off the top, about ¼ from the end to remove remaining tops of the leaves
- rub all over, especially cut areas with lemon juice to prevent browning
- place in a pressure cooker or Instant Pot cut side down and add in water and salt and cook on high for 7 - 10 minutes, depending on the size of your artichokes
- once cooked, remove and cool for a few minutes
- cut down the center, starting at the stem to halve the artichoke
- remove the "choke" or the fuzzy part by running a knife along the base of the choke and scooping out with a teaspoon
- rub the cut sides with olive oil
- grill cut side down on a preheated grill and cook for 60 seconds or until your desired amount of char
- prepare dipping sauce by combining sour cream and dijon
