Gruyere New Potato Casserole with Asparagus

This easy casserole dish uses spiralized spring new potatoes to make a dish that will impress guests and satisfy the tastebuds.

Gruyere New Potato Casserole with Asparagus

  • Servings: 1 cup
  • Yield: 8
  • Prep Time: 10 min
  • Cooking Time: 30 min

Ingredients

  • 2 385g white potatoes, peeled and spiralized
  • 2 cups grated gruyere cheese
  • 10-12 asparagus spears, bottoms trimmed
  • pepper, to taste
  • 2 teaspoons grated parmigiano-reggiano cheese

Preparation

  1. Preheat the oven to 400 degrees. In a 1.9 quart casserole dish, place in half of your spiralized potato noodles. On top, evenly spread one cup of the gruyere.
  2. Lay the rest of the potato noodles on top of the layer of gruyere.
  3. Sprinkle the other cup of gruyere over the noodles.
  4. Lay down your asparagus over the gruyere, pressing down each time. Dust with freshly cracked pepper.
  5. Place into the oven and bake for 30 minutes. After 30 minutes, remove the casserole, set the oven to broil and sprinkle the top of the casserole with the parmigiano-reggiano cheese. Place the casserole back into the oven and broil for 2 minutes.
  6. Slice into eight pieces and serve.
