In the early '70s, our family lived in Iceland while my husband served in the Navy. We made good friends with an Icelandic family, and they taught us how to cook haddock the Icelandic way. They called it Isa (pronounced Eesa). Delicious!
Icelandic Cod Isa
Ingredients
- Two pounds fresh haddock filets, cut to two inch widths
- One-half box (7 ounces Ritz brand crackers (Crushed)
- One stick of butter (one-quarter pound
- Three-quarters cup of vegetable oil
- Two large yellow onions sliced into thin rings
- Four eggs
- One-half cup whole milk
Preparation
- In a bowl, beat together the milk and eggs.
- Crush Ritz crackers in another shallow bowl or pie tin.
- Dip fish pieces into the egg mixture, then cover well with Ritz cracker crumbs
- Set fish aside on a plate
- In large skillet, heat oil and butter together
- Add onion circles to the oil mixture and decrease the heat to medium
- After a few minutes add the fish and increase temperature slightly
- Cook until fish and onions are golden brown, turning as needed
- Place completed fish and onions on paper towels to absorb excess oil
- Serve with lemon wedges
- Optional: garnish with grape tomatoes and scallions
