A classic combination of Lemon and Lavender combine in a delicate cookie with a crisp outside and soft middle. They scream "Spring is Here!" and the best part is you don't even have to turn on the oven!
Lemon Lavender Waffle Cookies

Ingredients
- 2 cups flour
- ¾ cups sugar
- ¼ teaspoon baking powder
- 2 teaspoons dried lavender
- 1 teaspoon lemon zest
- pinch of salt
- 14 tablespoons butter, melted and cooled
- 3 eggs
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
- juice of 1 small lemon
- water if needed to make the glaze
Preparation
- In a large bowl, combine the flour, sugar, baking powder, lavender, lemon zest and salt.
- Add the eggs, one at a time
- Pour melted, cooled butter into crumbly flour/egg mixture. Add vanilla.
- Stir carefully to combine completely.
- Cover and refrigerate for 1 hour.
- Heat waffle iron to medium high heat
- Place a small scoop of batter into each section of the waffle iron.
- Close lid and bake in waffle iron for 3-4 minutes or until golden brown.
- Remove to cooling rack and let cool slightly.
- Repeat until all batter is used.
- Meanwhile, make the glaze.
- Combine 2 cups powdered sugar and the juice of a small lemon (and water if needed to make a thin glaze)
- Spoon glaze over each cookie and let the glaze dry.

These cookies will be soft when they first come off the waffle iron but will crisp some as they cool.
