A slightly less sweet, protein-packed update of a Monte Cristo & allergy-friendly, of course ~

Ingredients
- Ians French toast sticks (defrosted and cut in half)
- Your choice of hummus
- Swiss cheese, cut into bite-sized squares (can use dairy free, such as Daiya)
- Ham, cut into bite-sized squares
- Avocado, sliced
- Sunflower oil (I used Winona Pure)
- Confectioners’ sugar
Preparation
- Defrost the French toast sticks in the refrigerator the night before.
- Preheat the oven to 350°.
- Line a baking sheet with aluminum foil and lightly coat with oil.
- Spread some hummus on one side of each French toast stick.
- Assemble the sandwiches in layers as follows: French toast stick (hummus side up), Swiss cheese, ham, avocado, Swiss cheese, French toast stick (hummus side down)
- skewer with a toothpick
- Lightly spray with a bit of oil
- bake until lightly crispy
- Dust with Confectioners’ sugar
