Nothing says summer like fresh fruit salsa! The colors are bright and the flavor of the fresh fruit mixed with the lime juice will have your family, and your guests, begging for more!
Peach & Mango Salsa
Ingredients
- 8 small peaches
- 2 large mangoes
- 4 Tablespoons red onion
- 3 Tablespoons fresh jalapeño
- 2 Tablespoons cilantro
- Juice of 1 lime
- 1 Tablespoon sugar
- Salt and pepper to taste
Preparation
- Peel and dice peaches and mangoes.
- Mince red onion and jalapeño.
- Roughly chop cilantro.
- Add all ingredients to a large bowl and mix well.
- Best when chilled for 1 hour.

While I prefer this salsa the day of, it is still great the next day. The onion flavor is more concentrated on day 2, so if you plan to wait to serve you might cut down on the onion.
