Pineapple chicken with broccoli
I think this recipe is quick and easy with some healthy ingredients. Get home late from work and in 30 minutes you can whip up a good hot meal. No fast food tonight...

Ingredients
- 1 lb. chicken tenders
- 1 broccoli crown
- 1/2 cup brown sugar
- 1/2 cup pineapple chunks
- 1/2 stick butter
- 6 oz pineapple juice
- 2 garlic cloves
- Few green onions
- Sesame seeds
- 2 tbls flour
- Roasted garlic quinoa
- Soy sauce
Preparation
- Brown cleaned chicken tenders with butter
- Add garlic
- Add Roux and pineapple juice
- Steam broccoli in a separate pot
- Add broccoli and pineapple to chicken
- Simmer until sauce thickens - about 10 minutes
- Pour over quinoa and top with sesame seeds and chopped green onion
