Portuguese Kale Soup

Kale, onions and fresh potatoes straight from the spring garden are the stars of this amazing soup. It is really easy to make and I haven't meant anyone yet that hasn't loved it. I made it as part of our Cape Verde (now called Cabo Verde) menu as we are on a culinary journey around the world, alphabetically. Enjoy!

Portuguese Kale Soup

  • Servings: 1 bowl
  • Yield: Serves 4
  • Prep Time: 10 min
  • Cooking Time: 45 min

Ingredients

  • 1 ½ Tablespoons Olive Oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken stock or mix of chicken stock and water
  • 4 medium potatoes, peeled and cut into chunks
  • 1 1b. Linguica sausage, sliced
  • ½ lb. chourico or chorizo, crumbled
  • 4 cups Kale, chopped
  • 1 Tablespoons lemon juice, fresh
  • salt and pepper to taste

Preparation

  1. Heat oil in a large soup pot to medium high
  2. Add in the onions and garlic, cook until soft but not browned about 5 minutes
  3. Add in the chicken stock or chicken stock and water combination
  4. Add in the potatoes, salt and pepper to taste and bring to a boil
  5. Reduce heat and simmer until the potatoes are soft about 20 minutes
  6. Remove the pot from the heat and lightly mash the potatoes with a masher
  7. In another skillet, over medium high heat, cook the sausage, stirring until browned
  8. Add the meat to the soup pot making sure to include any crusty bits
  9. Simmer for five minutes then stir in the kale, and simmer for a few more minutes
  10. Add the lemon juice
  11. Ladle into bowls and enjoy with some nice crustry bread for an awesome meal.
