This soup is creamy and packed with lots of flavor. Very easy to make and can be enjoyed any time of the year! Best with a savory grilled chicken sandwich!
Roasted Red Pepper Tomato Bisque Soup
Prep Time: 10 min Cooking Time: 45 minIngredients
- 2 Red peppers
- 4 cans of diced tomatos
- Chicken broth
- Minced garlic
- Fresh basil
- Heavy cream
Preparation
- Add all cans of tomatoes to pot
- Add about 1-1.5 cups of chicken broth to pot
- Add one tablespoon of garlic
- Add a couple basil leaves to the pot
- Bring to a boil and then let simmer
- Coat red peppers in olive oil
- Roast peppers in oven on 400 degrees for about 30 min or until blackened on outside
- Remove skin from pepper
- Add the peppers to the soup and let it cook for another 15 minutes
- Pour soup into a blender in small batches to blend smooth
- Add heavy cream to taste
