Salmon Cakes have been a family favorite for years but they were always fried. I decided a few years ago to bake them to take away some of the fat and make them healthier. Truth is they taste just as yummy as the fried!
Salmon Cakes
- Servings: 1 patty cake
- Yield: About 7 cakes
- Prep Time: 10 min
- Cooking Time: 30 min
Ingredients
- 1 can Salmon- drained and bones out
- ½ cup bread crumbs
- 1 egg
- 2 tablespoons paprika
- 1 tablespoon lemon juice
- Cracked pepper
- Optional- ½ cup chopped onions and peppers
- Optional- salt
- Optional- Rosemary
Preparation
- Preheat oven 350
- lightly spray baking sheet with olive oil
- Bake 10-15 each side or until golden brown

Mix all ingredients. I use a ice cream scoop to patty them out. Serve with your favorite vegetables and salad greens!
