Salmon Cakes have been a family favorite for years but they were always fried. I decided a few years ago to bake them to take away some of the fat and make them healthier. Truth is they taste just as yummy as the fried!

Salmon Cakes

  • Servings: 1 patty cake
  • Yield: About 7 cakes
  • Prep Time: 10 min
  • Cooking Time: 30 min

Ingredients

  • 1 can Salmon- drained and bones out
  • ½ cup bread crumbs
  • 1 egg
  • 2 tablespoons paprika
  • 1 tablespoon lemon juice
  • Cracked pepper
  • Optional- ½ cup chopped onions and peppers
  • Optional- salt
  • Optional- Rosemary

Preparation

  1. Preheat oven 350
  2. lightly spray baking sheet with olive oil
  3. Bake 10-15 each side or until golden brown

Mix all ingredients. I use a ice cream scoop to patty them out. Serve with your favorite vegetables and salad greens!
