A healthy, hearty salad that's good on the go for your tailgate.
Tailgate Chopped Salad
- Servings: 1 cup
- Yield: 6
- Prep Time: 20 min
Ingredients
- ½ cup mayo
- ½ cup buttermilk
- 2 tsp lemon juice
- ¼ cup fresh basil
- salt and pepper to taste
- 8 oz Israeli Couscous
- 8 oz cherry tomatoes
- ¼ cup dried cranberries
- 1 cup chopped arugula
- ½ cup corn
- ¼ cup pepitas
Preparation
- Combine mayo, buttermilk, lemon, salt, pepper, basil and oil in a blender and blend until smooth.
- Layer remaining ingredients in plastic cups with the couscous on the blottom.
- When ready to serve, pour dressing over salad and serve.
