Mint -Chocolate Chips Rice Pudding

Ingredients
- 1 cup long grain brown rice, cooked
- 3 Tbsp. mint, finely chopped
- 4 cups 2% milk
- 2 Tbsp. Honey
- 2 Tbsp. coco powder
- 1 Tbsp. corn starch
- 2Tbsp. dark mint chocolate, chopped
Preparation
- Cook brown rice as instructed on package
- To the cooked rice add 3 ½ cups of milk and let it come to a boil stirring occasionally
- In a small bowl mix 1 Tbsp. of corn starch with a ½ cup of milk, mix well; add to the rice mixture
- Stir in honey, coco powder and mint
- Let mixture thicken up about 15 minutes
- Add chopped chocolate on top
